The gala is the evening guests describe when they get home, so we orchestrate it as one arc, with every supplier working to the same timings. We time the arrival and welcome drinks to the light, compose the tablescape and florals for the room, and build the menu on Greek produce and tradition. Entertainment goes in where the evening needs it, and the close sends people off well.
